Our Rookies recently learnt the art of foraging in Wales, where they were challenged to fillet fish, prepare rabbit, and identify wild, edible plants.
The Rookies from the four 16 Hospitality pubs arrived at the campsite after a thirty-minute hike in the Coed Nant woodlands. The team cooked up a culinary delight of rabbit gyozas, trout stir fry, lightly fried trout fillets along with a warm rabbit salad, and finished the meal with blackberry Eton mess and pancakes with a blackberry coulis! The whole group ate the fruits of their labour in front of the fire before learning how to distinguish potentially poisonous plants against those that are safe to eat.
The Hub gives our Rookies ‘hands-on’ industry training so they can understand the food that they prepare and serve, and encourages new passions through a number of exciting external trips.
